Brewing

How much do I use?

Three grams a drink, hot or iced. That is one sachet, or about one and a half teaspoons from the pouch. Whisk it into 60 ml of water at 75–80°C, then top with water or milk. For a 16 oz iced glass, use two.

Why not boiling water?

A milled leaf has far more surface area than a whole one, so it gives everything up in seconds. Boiling water pulls too much too fast and turns the cup bitter. Take the kettle off the boil and let it sit a minute — 75–80°C.

Do I need a special whisk?

No. A bamboo whisk is lovely and a small electric frother is faster, but a jar with a tight lid and ten seconds of shaking does the job. You are dispersing a powder, not aerating milk.

Why whisk into water first instead of straight into milk?

Powder dropped into cold milk clumps and stays clumped. A small amount of hot water first — 60 ml is plenty — opens the powder into a smooth base that milk then thins. It takes ten seconds and it is the difference between a good cup and a gritty one.

Does it work with oat milk?

Yes, and it is what we drink most. Bloom the powder in water first. Plant milks have no casein to soften tannins, so that step matters more here than it does with dairy.

How do I make it iced?

Same three grams, same 60 ml of hot water. Whisk it smooth, then pour it over a full glass of ice and top with cold milk or water. Building it hot first is what keeps it from separating.

It settles at the bottom of the glass.

It will, and that is the point. There is real leaf in the glass rather than an infusion of it, so there is something there to settle. Stir it back through. Over ice it settles faster because the cold thickens the milk.

Can I cook or bake with it?

Yes. It is ground leaf and nothing else, so treat it like a ground spice — into batters, doughs, cream, ice cream bases. Hojicha and genmaicha take to baking especially well.

Should I sweeten it?

Entirely up to you. The roasted ones — hojicha, genmaicha, buckwheat — already read sweet without anything added, so start there before you reach for syrup.

The teas

Is this matcha?

No. Matcha is one specific shade-grown Japanese green tea. Kaori applies the same idea — mill the whole leaf, whisk it, drink it — across the whole selection, including oolongs and blacks that nobody usually powders.

Why not just use a tea bag?

Steeping extracts what dissolves and throws the rest away. Whisking means you drink the leaf itself, which is why a powder makes a latte and a tea bag does not.

Which ones have caffeine?

Seven of the nine. Buckwheat and rooibos have none at all — they are not tea leaves, so there was never any there to begin with. Of the caffeinated ones, hojicha is the gentlest: the roast drives most of it off, which is why it is the one served in the evening.

How long does a bag last?

A 100 g pouch makes about 33 drinks at three grams each. The sachet pack holds 20 sachets, one drink apiece. At a cup a day that is roughly a month from the pouch.

Which one should I start with?

Answer four questions and we will point you at one — find your tea. If you would rather taste your way through, the whole selection is here.

How should I store it?

Airtight, cool and dark, and away from the steam above your kettle. Reseal the pouch after each scoop. Milled leaf has far more surface area than whole leaf, so it stales faster — buy the size you will actually drink.

What is actually in it?

In most of the selection, one thing: the leaf, milled. No sugar, no milk powder, no anti-caking agents. Every product page lists exactly what is in that tea.

Subscriptions

How does a subscription work?

Pick a tea, choose Subscribe and save, and it arrives on a rhythm you set — every month, every two months, or every three. Every delivery is 10% off, and you can skip or cancel at any point.

What is the "how much do you drink" question for?

It sizes the order rather than the interval. A pouch is 33 drinks, so at one a day it covers a month and we send one. At two a day it does not, so we send two. You can ignore it and set the interval yourself.

How do I skip, pause or cancel?

From your account, using the link in any order email. Nothing needs to go through us, and there is no minimum number of deliveries.

When am I charged?

On each delivery, not upfront. The first charge happens when you place the order and every one after that on its delivery date.

Can I change which tea I get?

Email us and we will switch it over. Plenty of people subscribe to one and rotate it with the seasons.

Orders and delivery

Where do you ship from, and how quickly?

Every order is packed and shipped from Vancouver, British Columbia, within two business days. You will get a confirmation email with tracking as soon as the parcel leaves us.

Is shipping free?

In Canada, yes on orders over $75. To the United States, on orders over $100. Everywhere else, on orders over $150. Below those amounts you pay what Canada Post charges us for your parcel, calculated at checkout from your address and the weight of your order, with nothing added on top. The full picture is in our shipping policy.

Do you ship outside Canada?

Yes, everywhere. Every parcel is tracked and sent by Canada Post, and the rate for your address is worked out live at checkout. Standard delivery takes about 6 to 10 business days to the United States and one to three weeks elsewhere. Any import duties or taxes charged by your country are paid by you on arrival.

Can I change or cancel an order?

Email us as soon as you can with your order number. We pack within two business days, so there is usually a window — once it has shipped we cannot pull it back.

My parcel is late, damaged or missing.

If it arrives damaged, or tracking says delivered and it is not with you, email us within 14 days and we will make it right. Delivery estimates come from the carrier and are estimates rather than promises.

I entered the wrong address.

Tell us quickly and we will try to catch it. If a parcel comes back to us because the address was incomplete or wrong, we will get in touch to arrange reshipping, which is charged at cost.

Returns

Something is wrong with my order.

Email hello@itskaori.com with your order number, and a photo if something arrived damaged. We would rather hear about it than have you sit with a bad cup.

Can I return an order?

The window, the conditions and the exceptions are all set out in our refund policy. If you are unsure whether yours qualifies, write to us first and we will tell you straight.
